Someone told me the other day
that they over heard two of their
grandkids talkin and one of them said
'Why did God make mommys?"
and the other one answered and said
"So they can cook for kids and daddys", hehehehe,
now there's a lot of truth in that dear ladies!
And gentleman, I may have one or two fella's
that might like to
read my recipes...

OK, so you have asked for a simple Breakfast
Casserole that your
hubby will love! Maybe for his Saturday off,
just before
he leaves to go fishin'...hehehe
First you have to get some good music a going
something that will put you
in the mood to cook...
With that a goin' let's get out a 11x7 in.
casserole dish and spray it with
some of that Pam... We're gonna make a sausage
and egg dish that will
knock your hubbys socks off! He's gonna ask for
this one again!
(And it's quick and easy for you to make!)
hehehe
Oh yeah you are gonna need a medium sized
skillet, I use cast iron for
all my cookin, you use whatever you want, but
the cast
iron is great for cookin...
Here's what you're gonna need for this dish....

Breakfast
Casserole

A Package of them frozen hash browns (24 ounces)
2 tablespoons of butter, (or your favorite
margarine)
1 cup of pepper jack cheese, (or cheese of your
choice)
1/2 pound of bulk sausage, (not links)
7 eggs (whip them up really good)
1 can of diced green chilies ( 4 ounces) (hot or
mild to your taste,
or your hubby's)

Toppings:
3 medium tomatoes - sliced
1/3 cup of pepper jack cheese, (or cheese of
your choice)
Cilantro for garnish

Now if you're in a big hurry and hubby's a
hopping around and ready
to get out there to his boat, you can make this
dish a lot faster if you
pop them hash browns in the microwave for bout 5
minutes on defrost....
Then you take your skillet and melt the butter,
add your hash browns and
your sausage and brown them at a pretty fast
speed...
Now while they are a cookin, get out a bowl big
enough for the rest of
your stuff, and beat them eggs till they are
fluffy, then add your browned
hash browns and sausage, your cheese and
chilies...
Stir them up real good and pour it all into your baking
dish....
Bake around 25 minutes at 400...
Now when it's all done, slice your
tomatoes and and put on top and
sprinkle the cheese on them, and if you want to
you can put it under
the broiler just to brown the cheese a little
bit....
Now you want to chop that Cilantro up pretty
good and sprinkle it on top
for a unique taste...
