After church on Sunday Mom always had fried chicken, made in the
iron skillet in case the preacher was to stop by.
I can still see Mom chasing those chickens around the yard.


I don't think they wanted to be dinner.

    

Virginia Old Dominion Fried Chicken

2 young chickens
3/4 cup flour
1 teaspoon of salt
1/4 teaspoon pepper
1 cup fat or Crisco

Cut chickens into several pieces. Wash carefully and dry.
Place flour, salt, pepper and chicken in a bag and shake well
to coat with flour and seasonings.


Heat fat in a large, heavy skillet.


Drop pieces of chicken in hot fat and brown quickly on both sides.
Lower heat, cover skillet and cook slowly until tender.


Serve with cream gravy from the fat left in the skillet.
