Even tho
Mom has been gone 25 years, I can still at times
smell that
aroma of her mouth watering pot roast cooking in
the old iron pot.
And hoping there would be leftovers to have a
roast beef sandwich
that night and the next day.

Mom's Beef Pot Roast
5 pounds beef (shoulder or sirloin tip
preferred)
1 teaspoon celery seed
4 tablespoons Worcester sauce 6 whole cloves
1 tablespoon vinegar Pinch of mustard
3 small onions diced 1/8th teaspoon nutmeg
2 slices bacon 1/2 cup flour
Salt and pepper to taste
Sear the meat on both sides.
Brown the flour and sprinkle over the beef.
Season with salt and pepper and put in an iron
pot
with vinegar, onions, Worchester sauce, cloves,
celery seed, nutmeg and mustard.
Lay bacon strips across the top,
pour in cold water to a depth covering 2/3 of
the meat and cook slowly for 4 hours.
Potatoes may be cooked around the meat.
