A anytime tasty summer time favorite
we enjoyed all summer at Mom's and
church.
For years, Mrs. Maude Simms was
in charge of food at Olivet's annual
Strawberry Festival. Her special strawberry
short cake was a lure that brought visitors
back faithfully each year.
Sift
together flour, sugar, baking powder and salt.
Melt butter and add with milk and beaten
eggs to dry ingedients. Mix thoroughly. Beat
for about two minutes.
Pour batter into
long shallow pan and bake at 375 degrees for
35 minutes.
When the cake is cool, slice
in half lengthwise. Place layer of ice cream
over bottom slice and cover with crushed
strawberries. Add top layer, cover with
strawberries and top with whipped cream.
This recipe, which serves 18, can be
halved for family use.
